Tatler Philippines proudly presents Tatler Dining Kitchen, an exciting new initiative bringing you once-in-a-lifetime dining pop-up experiences you won’t want to miss. To kick off this series, Tatler Dining unites two of the country’s best chefs for two nights only: Miko Calo and Stephan Duhesme.

Together, they have crafted a sophisticated 8-course menu inspired by the motifs ‘training and heritage’, featuring stunning produce and unexpected flavours. Expect new and exciting dishes you won’t be able to try anywhere else and have not tasted at any of their restaurants. 

With Tatler Dining Kitchen we create a pop-up restaurant experience (with only 50 seatings per night) that brings forth a menu unbound by cuisine, unleashing the total creativity of two culinary powerhouses, complete with unlimited red wine, white wine, bubbly, and cocktails by Martell Cognac.

Tatler Dining’s Chef of the Year 2022 Miko Calo is without a doubt one of the country’s leading culinary figures. In 2019, the Butuanon chef catapulted into Manila’s fine dining scene with the opening of her restaurant, Metronome: an elegant destination in Legazpi Village that proved French cuisine doesn’t have to be stiff or boring. Just six months later, Metronome was recognised as Tatler Dining’s Best New Restaurant 2020 and earned a coveted spot on the exclusive Tatler Dining 20 list—a position it firmly held year after year, until Calo’s departure in April 2024 and its permanent closure in the following month. While she continues to helm her tongue-in-cheek French-Mexican taco shop, Taquería Franco, diners keenly await her next move with great anticipation.

Tatler Dining’s Chef of the Year 2024 Stephan Duhesme is best known for his work at Filipino restaurant Metiz: a constant feature in our annual Tatler Dining 20, as well as international rankings such as Asia’s 50 Best Restaurants. Here, the Filipino-French talent creates innovative tasting menus grounded in nostalgia, faithful to the provincial diet—while the dishes may be unrecognisable, its soul is undeniably Filipino. Earlier this year, Duhesme also opened the doors to his newest restaurant Automat, which conversely explores the urban Filipino palate through bolder, meatier flavours. With every bite, this Filipino food advocate engages guests in conversations that inspire new, broader perspectives of our cuisine.
