1. Rempapa

Singaporean restaurant Rempapa pays homage to Singapore’s local ethnicities with five curated kuehs, served in a multi-ethnic kueh box. Get started on the Chinese gao teng kueh (nine-layer kueh) perfumed with fresh pandan and coconut, before tucking into the arsang semut, a Malay delicacy known for its characteristic honeycomb texture and flavour.
Chef-owner Damian D’Silva elevates the putu bambu, rice cakes steamed in bamboo, by dousing it with house-made gula melaka. And if that isn’t enough for you, D’Silva adds a Eurasian touch to the festivities with the addition of putugal, made with grated tapioca and coconut milk. The kueh is identifiable by its mix of blue and white tapioca sandwiched together with ripened banana, all coated in fresh grated coconut.
Last but not least is the pulut tai tai, or pulut tekan, which got its name from the process of applying pressure to glutinous rice to form the kueh. This Peranakan kueh is marbled blue with butterfly pea flower dye, and served with kaya.
Available from now until August 11 for dine in at Rempapa, takeaway, or delivery.
