Restaurant Aurora’s founder Atty. Nilo Divina gathers a culinary team to put together a 10-course tasting menu that captures Asian culinary traditions and warm memories of home
Food memories are some of the most powerful motivators, influencing not only what we eat on a daily basis or what we feed our families and loved ones, but also helping us to distinguish our priorities and values. For Divina Law founder Atty. Nilo Divina, memories of his mother preparing meals for them and having them come together as a family left such an indelible imprint that, to him, those memories are not only meant to be preserved but also should be shared with others. Because of this, he founded Restaurant Aurora, named after his mother and a place he envisioned to bring the same sense of family and joy to friends, clients and guests. “I wanted a place where I can entertain and create memorable moments, while sharing the fun and excitement of fine dining with everyone,” he shares.

To bring this vision to life, Atty. Divina personally assembled a talented roster led by executive chef Mark Sanchez, sous chef Danielle Lim and mixologist Jomer Calangian, who together have crafted a 10-course menu that celebrates creativity, sustainability and top-notch technique. Chef Mark’s training in Southeast Asian cuisine and his predilection for sustainably-sourced local produce are reflected in innovative dishes that marry traditional Asian flavours and contemporary applications.
The tasting menu is composed of dishes that rise and dip with the hushed conversations in Aurora’s elegant, dramatically lit dining room, alternating delicate bites with powerful punches of flavour. A seemingly simple yet memorable cup of mushroom consommé crowned with mushroom espuma and shaved Cordillera truffle is a fitting introduction—comforting, nourishing and local.

Fun and innovative snacks show off the kitchen’s playful side—there’s sake-cured tuna, tomato meringue, lime kosho; curried carrot foam, roasted carrots, pai tee; foie gras mousse with strawberry curd, brick pastry; and Angus beef tenderloin, with a wasabi egg yolk, and a potato nest. A soft-poached French oyster with calamansi jelly and fermented aguachile came next, while a beautifully smoked red snapper with ginger emulsion, ikura and orange-coconut sauce followed, highlighting the team’s technical prowess.
The Angus short rib braised for 48 hours is accompanied by an aromatic red curry, making it perfect with multi-grain rice. And while the peach mango dulce ice cream was a lovely way to end the meal, the bar’s well-crafted mocktail and cocktail pairings are convincing arguments to cap off the evening with a drink or two. Refreshing signatures such as the kaffir lemongrass soda, cucumber green apple, yuzu moscato and a pisco pineapple cocktail demonstrate Calangian and the team’s mastery of mixology and show that coming to Restaurant Aurora early for cocktails should always be part of the evening’s plan.

This new menu accurately captures not only the kitchen’s distinct culinary style but also the creative vision of Aurora’s founder—delicious and elegant dining with soul. It honours the beloved woman the restaurant was named after while offering discerning diners fresh, contemporary takes on familiar Asian classics. Sometimes, an homage gets trapped in the past, but not Restaurant Aurora.
