Bangkok is riding on a high with nine of its finest restaurants honoured among the Asia's 50 Best Restaurants 2023, and soon, Hongkongers will be able to get a taste of the Thai capital's gastronomy scene when one of its culinary stars, chef Pam Soontornyanakij of one Michelin-starred Restaurant Potong, arrives here next month.

Housed in a historic 120-year-old Sino-Portuguese building in Bangkok's Chinatown, Potong celebrates Soontornyanakij's mixed heritage through her innovative Thai-Chinese cuisine, earning it a place at #35 on Asia's 50 Best Restaurants 2023, among other prestigious accolades.

For the first time in Hong Kong, Soontornyanakij will team up with chef Vicky Lau at Tate Dining Room, Tatler Dining's current Chef of the Year, to create a delectable collaborative tasting menu that fuses French-Chinese and Chinese-Thai flavours. This culinary partnership was born from an instant connection between the two chefs at the 2022 Michelin Guide gala dinner in Bangkok.

As Lau puts it, "We share very similar culinary philosophies, starting with our foundational approach to cuisine as a form of storytelling on a plate." The resulting menu is a reflection of two unique yet complementary perspectives that meld tradition with progressive flavours. Clocking in at 11 courses, the menu encompasses dishes such from Tate such as grilled sea bass with fresh seaweed broth, and Greffeuille lamb saddle roulade; and Potong creations like fish maw with scallop mousse and scallion, and crab with roe in black pepper and broth.

Priced at HK$1,880 for lunch and HK$2,880 for dinner with the option of a wine pairing, the Potong x Tate Dining Room four-hands menu will be served at Tate Dining Room on May 17 and 18, 2023.
