Here are five must-try experiences for when you travel to Rome, as suggested by foodie and restaurateur Amado Forés
When in Rome, do as the Romans do—right? Well, not in this case. We spoke to someone who grew up with a deep love for Italy woven into his everyday life, thanks to his mum, the late, great chef Margarita Forés. Since his youth Amado Forés has understood what constitutes a great meal and what elegant hospitality means. Having grown up with a chef, and around restaurants, the F&B world felt more like home to him. Today he is founder of AF Hospitality (A Mano, Ramen Ron, Steak & Frice, Lusso, Grace Park and Margarita Florals). He is also the president and chief executive officer of CIBO.
Now, Amado shares his top tips for experiencing the city that has meant so much to him over the years—and remains one of his favourite destinations.
For anyone who has been to Rome, you’ll know it’s a challenge to describe it accurately. It’s hard to put its grandeur into words—a place where a bold, brilliant history is paired with breathtaking beauty. From awe-inspiring architecture and buildings that have stood the test of time to charming shops that continue to practise the same crafts they have for generations, every street corner tells a different story.

Around every cobblestoned bend awaits another reason to fall in love with the city, whether it’s a scoop of gelato or a bowl of pasta or a crisp slice of al taglio Roman pizza. While you’re there, don’t miss this city’s four iconic classics: carbonara, cacio e pepe, alla gricia and amatriciana. Between the shopping, sightseeing and seemingly endless opportunities for food discoveries, there’s no shortage of ways to fill an itinerary. To help you make the most of your visit, Amado shares his top five recommendations.

Cocktails at Hotel de Russie
Hotel de Russie has always been a special place for me. It’s where my grandmother, Wawiya, loved to stay, and the Bloody Mary at the Stravinskij Bar was both her favourite cocktail and mine. If the weather is nice, enjoy it outdoors in the Secret Garden. The vibe is amazing, and it’s one of my favourite spots in Rome for an afternoon cocktail.

Roman Pizza at Pizzarium
Whenever I think of Roman pizza, I think of Gabriele Bonci. He’s one of the most influential pizza chefs in the world and was featured on Chef’s Table: Pizza. The menu changes every day, but that’s part of what makes it special. I always look for the Pizza Rossa, Patate e Mozzarella, Supplì alla Carbonara and Supplì alla ’Nduja, but if you see a seasonal special that catches your eye, don’t hesitate to try it. A supplì is a classic Roman fried rice croquette with a crisp exterior and a rich, creamy filling.
Roman Classics at Da Enzo al 29
One of my favourite Roman trattorias. They don’t take reservations, so expect to wait unless you arrive about 15 minutes before they open. I always start with the Burrata di Andrea, served as stracciatella—it’s incredibly creamy. Then come the Rigatoni alla Carbonara and Rigatoni alla Gricia, two Roman classics done right. If Carciofo alla Giudia is in season, don’t miss it, and always finish with their famous Tiramisù.

Coffee at Sant’Eustachio Il Caffè
This was my mom’s favourite coffee spot in Rome, so it will always be special to me. The espresso and other classic coffee drinks are excellent, but my favourite is the Mousse al Caffè. During the summer, the Granita di Caffè is another must. Before you leave, pick up some beans, ground coffee or coffee pods to take back home.
Shopping at Chez Dédé
It’s my wife Carmela’s and my favourite shop in Rome. It’s owned by Daria Reina and Andrea Ferolla, the couple behind Italian Chic, Assouline’s book celebrating Italian style, craftsmanship and design. The shop has a perfectly curated collection of books, limited-edition prints, photography and home pieces. They also designed our wedding invitation, which makes every visit even more special.
