Treat mum to an authentic display of Japanese flavours at Shikigiku this Mother’s Day
Mother’s Day is just around the corner. And as Hong Kong steps into summer with longer days and balmier weather, what better way to show mum your love and gratitude than treating her to a refreshing meal? Executive chef Masahiro Noda of Shikigiku Japanese Restaurant has curated a seven-course menu designed to pamper and delight mum with fresh ingredients, bright flavours and stunning presentations.
The menu begins with an appetiser selection that delights the senses. From marinated sea urchin on spinach and Mitsuse chicken to simmered sea whelk and pressed eel sushi with hajikami (Japanese pickled young ginger), each bite offers a harmonious blend of sweetness, subtle acidity and natural umami. A sashimi platter follows, featuring sliced tuna, strip jack and flounder.
The signature tempura course offers crispy yet feather-light celebrations of the season finest ingredients. Fresh shrimp, chiayu (sweetfish), white asparagus, baby green pepper and sweet potato are meticulously fried to golden perfection, where a thin batter locks in the ingredients’ natural flavours.
The menu continues with a simmered course featuring premium Japanese spiny lobster alongside taro, pumpkin and okra. The crustacean is served tender and infused with the umami of a slow-simmered broth, enhancing the natural flavours of this prized catch with earthy, vegetal notes.
Meanwhile, the star of the menu awaits at the teppanyaki counter, where Shikigiku’s skilled chefs prepare a dish of Miyazaki beef steak, fresh scallops and seasonal vegetables, finished with a savoury onion sauce. A refreshing yet balanced rice dish follows, where a generous portion of assorted diced sashimi is layered over fragrant sushi rice. A Mother’s Day exclusive dessert concludes the menu, where the delicate sweetness of strawberry offers a smooth and elegant finish.
