The seafood restaurant at Marina Bay Sands offers the elevated versions of its signature dishes alongside new creations, and served in its a la carte and set menus

The Jumbo Group is a name that is synonymous with fresh seafood. Since 1987, the F&B group has been feeding locals’ appetite with tried-and-tested seafood dishes served at its portfolio of restaurants which include Jumbo Seafood in Singapore and beyond.

Last year, it expanded its offerings on the island with the opening of Jumbo Signatures, a more upscale restaurant at Marina Bay Sands which serves elevated versions of their classic creations in a la carte and set menus. 

Loyal and new fans will be glad to know that the new outlet offers elevated versions of its signature dishes. The popular chilli crab, for one, is served with just the pincer or the body (instead of the whole crab) in its legendary chilli crab sauce made with a secret blend of Asian spices like chilli, lemongrass, turmeric and candlenut. The sauce is much more decadent, thanks to the addition of the egg which makes it even more silky and velvety; so, use the deep-fried mantou buns wisely and mop up all the delicious sauce down to the last drop.

While it’s so easy to feast on chilli crab alone, make it an even bigger feast for loved ones with the other dishes on offer. Get started on the seafood century egg salad with tofu; it’s not your usual century egg dish as the tofu is made with steamed egg, surumi (fish paste) and Japanese seasoning, and is served chilled and topped with century egg and tobiko.

For something heartier, the signature fragrant fried rice studded with crab meat and sakura prawn comes in a piping hot stone bowl. Umami-rich prawn broth, made by simmering prawn stock for hours, is poured over the fried rice, further imbuing the rice with decadent seafood flavours. 

Soup lovers, of course, aren’t forgotten with offerings like the sliced luffa melon in golden stew. What you’ll get is a bowl of rich and creamy pumpkin soup enriched with sweet seafood, and given textural contrast with the luffa melon noodle strips and toppings of fried shredded conpoy, sakura ebi and Jinhua ham.

At Jumbo Signatures, you can choose to order these dishes a la carte or in the executive set lunch menu (available daily) which gives you a starter, main course, rice or noodle dish, and dessert. The set menus, which are updated regularly, are also a good introduction to the restaurant’s delectable repertoire, and options may  include the signature chilli crab, fragrant fried rice in seafood broth, and seafood century egg salad with tofu.
