Find out how the team at Concubine KL plans to reimagine the aromatic fish cracker snack

Celebrating the best of Malaysian street food with elevated versions of beloved heritage dishes, Tatler Dining presents its newest food festival, In The Mood For Food. To be hosted at Kuala Lumpur Golf & Country Club (KLGCC) from August 26-28, 2022 in partnership with Sime Darby Property and Sime Darby Motors, the festival highlights street staples reinvented by eight restaurants.

Included in the line-up this year is Concubine KL, known for small, contemporary plates that put an elevated spin on the street food Chinatown is well-known for. The team at Concubine KL will be serving their spin on keropok, a fish cracker snack.

Traditionally, to make the crackers, fish, tapioca flour and water are combined before being steamed and sliced. The pieces are then dried in the sun to draw out excess moisture before deep fried in hot oil, allowing the slices to grow into fluffy peach crackers within seconds.

Speaking to the team at Concubine KL, they explain how they wanted to encompass the global street food culture through a Malaysian lens. "When it comes to street food, who doesn't know nachos? But nachos isn't very Malaysian, so we wanted to imagine how the dish would look if it originated from Malaysia." 

The chefs were inspired by the roadside keropok. "We've always been big fans of the underrated keropok, so we decided to combine it with the most recognisable Malaysian flavours to bring more fun and colour to the table. The result is our keropok nachos, a dish that incorporates explosive flavours from sambal hijau and sambal balado, with fragrance from coriander, saltiness from ikan bilis and crunchiness from chicken skin."

Apart from the delicacy listed above, guests at In the Mood for Food will also get to enjoy custom cocktails by Bombay Sapphire and beverages from Carlsberg Malaysia, Langkawi Pure, Uncle Jeff Drinks and Honlynn Distillery’s Kaban Tuak. 3Rituals will be setting a cosy ambiance with its scented candles.

The first two nights of the food festival on August 26 and 27 are reserved for our main partners Sime Darby Property and Sime Darby Motors. Tickets are available for public sale for August 28.
