With over 30 years of experience under his star-studded belt, chef Fei’s penchant for transforming age-old traditions into stirring works of art is perfectly exemplified in his dish of marinated celtuce with pickled chilli. A jaw-dropping display of precise knifework, every slice of succulent wosun stem is carved to a uniform thickness and presented cleanly with flawless symmetry.

The boneless crucian carp congee is another delectable marvel. Its silken texture is achieved through the arduous process of extracting each and every bone by hand, turning a seemingly humble classic into a luxurious and sophisticated culinary masterpiece.

The ocean’s most prized treasures take the spotlight in the menu, often imbued with influences from chef Fei’s hometown. The geoduck, in particular, is one of chef Fei’s most lauded signature dishes, prepared in a rich, umami broth of the diner’s choice—velvety chicken, piquant basil and chilli, or a briny Chaoshan-style clam soup.

Classics are refreshed and refined through skillful interpretations of dishes such as the delicate Chaoshan-style threadfin, smoked and chilled to bring forth an alluring and complex interplay of taste and texture. Equally impressive is the accentuation of the grouper’s buttery, firm flesh through methods such as braising with pickled vegetable and plum sauce, and steaming with aged tangerine peel and fermented soybean.

Prime seafood is also featured in the handmade dim sum menu, where xiao long bao is a sumptuous combination of crab meat and lobster bisque, and siew mai is topped not with the average roe but glistening spheres of baby abalone.
