Sweeping views of Marina Bay, chic décor, and delicious Italian fare make dining at Italian restaurant Dolce Vita memorable. At the helm is chef de cuisine Niccolo Ferrazzani, who hails from Tuscany. He has been known to capture palates with his down-to-earth and robust cooking that shines through in the novel dishes he brings to Singapore. Among his signatures are: granchio, crab meat flakes marinated in citrus juice to brighten the flavours and served with cauliflower panna cotta, avocado puree and yuzu dressing; and filetto, a delectable hunk of pan-roasted Wagyu beef tenderloin slicked with red wine jus and mustard hollandaise (to cut through all the richness). Complementing the menu that changes almost on a monthly basis is an equally astute wine list offering an extensive classic Old World selection of Italian pours.
