Marking two centuries since its first bottling, Evian continues to shape the global dining experience through world-class gastronomy, innovative mixology and a vibrant artistic collaboration with Jeff Koons
For many of the world’s best fine-dining restaurants, Evian has long been part of the story that shapes the dining experience. Water, after all, is essential to any meal, present from the moment guests sit down at the table and are offered a glass of still or sparkling.
Remarkably for a staple so fundamental to gastronomy, Evian’s journey to the table began in 1789, when French nobleman Marquis de Lessert discovered a natural mineral water source in Évian-les-Bains in the French Alps. Described as “light and easily drinkable”, the water filters through Alpine rock for more than 15 years, gathering its distinctive mineral balance along the way. Recognising its potential, land owner Monsieur Cachat began selling the water locally in 1806 and, 20 years later, in 1826, established the first bottling facility at the Cachat source—the moment Evian marks as the beginning of its two-century heritage.
To mark 200 years since its first bottling, the brand is hosting a series of culinary and cultural experiences across Asia Pacific, bringing its Alpine roots into the present day. In Singapore, the celebration took place at Le Pristine Singapore on September 2, where chef de cuisine Sebastian Feldbacher crafted an exclusive culinary experience for invited hospitality professionals, chefs, partners and opinion leaders.

“Having grown up in Austria, Alpine food is very personal to me. For Evian’s 200th anniversary, I wanted to create a menu rooted in the ingredients and traditions of Évian and Savoie, reinterpreted through a contemporary lens,” shared Feldbacher, who incorporated Evian natural mineral water directly into the dishes created exclusively for the event. “We connected the dishes directly to the water we were celebrating and gave guests a taste of the Alps here in Singapore through food that felt welcoming and full of flavour.”
The resulting menu drew a line between Evian’s Alpine origins and Savoyard gastronomy. Traditional crozets (pasta) were paired with girolle mushrooms and fresh chives, while Arctic char was served alongside horseradish and a clear pork consommé made with Evian water. Slow-braised beef cheek followed, cooked with Evian and accompanied by Mondeuse wine and Beaufort aligot, bringing together regional ingredients and contemporary technique. Across the courses, the flavours of the French Alps were reinterpreted through Feldbacher’s modern lens, with Evian moving from the glass into the cooking itself.
The philosophy extended to the bar with the Paloma des Alpes, a cocktail combining Evian Sparkling with tequila, grapefruit, lime juice and sugar syrup. Here, Evian’s Alpine heritage found another expression, this time through contemporary mixology.

The evening also provided the backdrop for the unveiling of Evian’s bicentenary limited-edition glass bottles, created in collaboration with contemporary artist Jeff Koons. The project continues the brand’s long-standing tradition of partnering with artists and designers to reimagine its signature bottle. For the “200 Years Young” milestone, Koons incorporated his iconic Balloon Dog into the artwork, bringing a sense of playfulness and celebration to the collection. The limited-edition bottles are available in pink for still water and blue for sparkling.
“When Evian approached me, the message about youth immediately resonated with me,” Koons noted. “It reflects a truth I deeply believe in: youth is not defined by age, but by a mindset. I’ve always loved Évian natural mineral water, so when I was invited to celebrate the brand’s 200 Years Young milestone, I was excited to create these special limited-edition bottles. I chose to incorporate my Balloon Dog into the design because it not only echoes the iconic status of the brand itself, but also embodies the spirit of celebration, playfulness, curiosity and the joy of creating—a moment that feels both life-giving and uplifting.”
Two centuries after its first bottling, Evian remains closely connected to the rituals of the table, while continuing to find new expressions through gastronomy, design and hospitality. From its source in the French Alps to a dining room in Singapore, its journey has travelled far beyond the spring where it began. Yet at the table, the role of water remains as essential as ever.
