The Covid-19 pandemic has affected many, if not all, of us in one way or another. On top of working from home, a shortage of hospital equipment and an impact on the economy, the pandemic has also affected the demand and supply of crops.
 
Various types of produce have faced scarcities over the past two years due to the pandemic and extreme weather, including marmite, avocados and cream cheese. The latest to join this list is potatoes.
 
This beloved spud has recently become unavailable in various countries, including Singapore, with multiple establishments offering alternatives to potato snacks, such as French fries. Since we are in a potato shortage, there is no better time than now to try various alternatives to this well-loved treat. Here are five to get you started.

1. Zucchini Fries

Just as tasty as French fries, this alternate chip features zucchini slices coated in panko breadcrumbs and parmesan cheese, and baked until golden brown. These fries offer a variety of textures in the mouth, from the crunch of breadcrumbs to the tender zucchini. Complement these fries with garlic aioli or spicy Sriracha for an extra kick.

2. Sweet Potato Fries

Although potatoes are currently low in demand, sweet potatoes, thankfully, are not. The most common alternative to French fries, sweet potato fries have a mildly sweet flavour and are typically baked. The result is a crisp and caramelised outer layer, while still soft on the inside. Like French fries, these fries come in various forms, including tater tots, waffle fries and wedges.

3. Rutabaga Fries

An underrated root vegetable, rutabaga is one similar to a turnip, with a taste identical to Yukon gold potatoes. Compared to French fries, these chips are on the sweeter side, with a hint of bitterness. While these fries are flavourful as is, it can also be complemented with a side of ketchup.

4. Parsnip Fries

Parsnips are a great alternative to potatoes. Not only are they a cross between carrots and potatoes, they are also high in folic acid, vitamin K and fibre. Similar to French fries, parsnip fries are soft and starchy, like potatoes, with a hint of sweetness. They are easy to whip up too—peel and cut them into thin slices before baking until golden brown. Tastewise, they are complex and earthy, with flavours akin to liquorice.

5. Cassava Fries

Replace French fries with this starchy root. Also known as yuca, cassava is a nutty-flavoured root that is rich in vitamin C, fiber and protein. These fries have a crispy and golden outer layer, while staying soft and fluffy on the inside. Tastewise, they have a texture similar to French fries, with a hint of sweetness.
