Taste flavours of the globe through a variety of tacos by top Philippine chefs
For one night, feast on tacos created by five top chefs in the Philippines: Miko Calo of Metronome, Jorge Mendez of Mōdan, Nicco Santos and Quenee Vilar of Cafe Aurora, plus Charles Montañez of Alegria Manila.
This 4th of July at 9pm, Alegria Manila hosts Curar La Resaca, a charity taco night. As no reservations are allowed, the restaurant will only accept the first 100 walk-in diners, so be sure to head there on time to secure a spot! To enter, simply make a donation of any amount at the door to be able to indulge in four limited-edition tacos while contributing to a worthy cause. All proceeds from this food-filled event, not just donations made at the door, will work towards assisting the elderly in need.

“Curar La Resaca is about making delicious food and enjoying some late-night fun in the process,” reveals Charles Montañez, the executive chef of Alegria Manila. “And if we can lend a helping hand while doing so, why not? It is an honour for both my team and me to welcome these talented chefs into our kitchen,” he adds.
These five chefs have excitedly developed four signature tacos for this special evening, each showcasing their cooking styles and skilful grasp of world flavours. Keeping it simple and with a focus on the sure-to-be spectacular Mexican-inspired fare, Alegria will only be serving shots, beer and water during Curar La Resaca.

Charles Montañez’s smoked puerquito taco
Suckling pig infused with aji panca and garlic, slow-smoked for 7 hours over santol wood, served on a yam and corn tortilla with a zesty jerk salsa.
Nicco Santos and Quenee Vilar’s laap phet tostada
Isaan-style duck laap on a spiced tostada, topped with salsa nam prik pla, avocado crema, and a fried duck egg.
Jorge Mendez’s aged buri tostada
Aged buri on a capsicum tosa tostada, enhanced by ikura and coriander mayu oil.
Miko Calo’s lamb bourguignon birria taco
A fusion of Mexican and French cuisines with slow-cooked lamb, a warm tortilla, and its rich dipping broth.
