The restaurant is helmed by the acclaimed Thaninthorn “Noom” Chantrawan of Chim by Siam Wisdom

While modern European or even Malaysian fine-dining concepts have populated Kuala Lumpur’s dining scene within the last few years, the same cannot be said for upscale Thai concepts. With locals often visiting Bangkok for their Thai fine-dining fix, Chim by Chef Noom comes at the right time, helmed by Thaninthorn “Noom” Chantrawan of Chim by Siam Wisdom. 

“Even though Malaysia neighbours Thailand and has a similar culture and palate, the understanding of Thai cuisine has not yet reached its peak,” explains Chantrawan. “Every region of Thailand has its own unique style and taste, and I wish to bring these flavours to Kuala Lumpur for locals to explore.”

While his restaurant in Bangkok, the one-Michelin-star Chim by Siam Wisdom, presents a modern tasting menu with Thai ingredients, the experience at Chim by Chef Noom also makes use of local Malaysian produce.

However, a dish that can be found at both establishments is Chantrawan’s signature take on the tom yum soup, which he calls The Lost Recipe. “The 200-year-old recipe is a traditional variation of the soup served to Siam royals during the early 19th century,” the chef explains. Enriched with Thai herbs, river fish, fruits, and chilli, the hearty broth is a more textural and warming take on the common tom yum.

Having worked in the UK for 14 years, Chantrawan cut his chops across London at restaurants such as Zuma, Roka, and Sketch, before returning to Thailand to participate in Iron Chef Thailand, which he went on to win. Chim by Chef Noom is his first restaurant out of Thailand, born with the hope to bring Thai flavours to neighbouring countries.
