With a new menu in tow, new chef Antoine Bonnet brings Brasserie Les Saveurs back to its French roots.
The St. Regis Singapore’s Brasserie Les Saveurs has been our go-to place for a taste of New York’s social scene for the well heeled. The restaurant, which is luxuriously decked out in rich fabrics, a crystal chandelier and floor to ceiling windows draped with heavy curtains, recently welcomed a new chef in July. French chef, Antoine Bonnet, honed his culinary skills in Europe and the Middle East and brings his passion for contemporary French cuisine to Singapore.
Bonnet has revamped almost the entire menu at Brasserie Les Saveurs. His creations are classically French, but with slight creative deviations – especially with the pastry. Expect traditional brasserie fare such as nicoise, pan-seared foie gras and lobster thermidor.
Particularly noteworthy was the Bouillabaisse Facon Les Saveurs, a seafood stew with fennel and saffron. Bonnet followed the traditional Marseille recipe to a t. Shrimps, mussels, potatoes, octopus and ripe tomatoes were all found in this flavourful slow-cooked stew.

The Filet Mignon Sauce Au Poivre was also fantastic. The grilled tenderloin was juicy, yet slightly charred on the outside and smothered with peppercorns of various colours. The staple accompaniments of creamy truffled mashed potatoes and green beans were paired with the succulent meat.

The dessert of La Gateau A La Banana is a diversion from Bonnet’s traditional French fare. It's a mix of textures of various tropical fruits that consists of banana mousse cake, apricot compote, mango salsa and banana ginger ice cream – all created with Bonnet’s sophisticated French hand, of course.
