This includes his signature beer-battered fish and chips, where locally farmed golden snapper is used to guarantee a firm and fresh texture beneath a uniquely light and crisp batter. 

What makes his recipe so unique? He tells us that he incorporates Brewdog Punk IPA and vodka to the recipe, ensuring that the batter remains light and crispy after it is deep fried. Fish and chips won’t be complete without accompaniments, and Penney serves his signature dish with mushy peas and homemade tartare sauce.

The fish and chips joint in Tanjong Pagar counts chefs like Kirk Westaway among its fans, and for good reason. Reimagining the British classic for the local palate, which is often wrapped in paper,  the culinary team here uses Atlantic haddock that is enveloped in a perfectly crisp beer batter that yields with a satisfying crackle to reveal succulent, flaky white fish within. The accompanying thick-cut chips are substantial and are a delightful balance of slightly crisp exterior and a fluffy interior—the ideal vessel for soaking up a splash of malt vinegar.

Greenwood Fish Market is known for its fresh and premium seafood, and that is what you can expect from its version of fish and chips, which uses the seasonal catch of barramundi, snapper, tusk or black cod. Instead of one big portion, diners are served smaller strips of fish that are coated in a thin and shatteringly crisp batter and best with a squeeze of lemon juice to give it an acerbic touch.
