Acclaimed Italian restaurant Art di Daniele Sperindio, helmed by its eponymous chef-owner, will reopen at Fort Canning’s Mett Singapore after year-long hiatus
Singapore’s gourmands can mark their calendars: Art di Daniele Sperindio makes its highly anticipated return this December, reopening at the newly launched Mett Singapore in Fort Canning Park after a year-long pause.
The award-winning Italian restaurant, led by chef Daniele Sperindio, has found a fresh canvas in the boutique hotel, swapping the grand civic halls of the National Gallery Singapore for a setting that’s more intimate and deeply connected to nature. For Sperindio, the move is more than a new address—it’s a return to a place of meaning. “I was married here 13 years ago,” he reminisces. “Once the fundamentals aligned, the serendipity sealed it. I’m a sucker for meaningful buildings.”

This next chapter comes through a partnership between Sperindio’s I’WA group and Sunset Hospitality Group, with the chef taking on the dual role of creative force behind Art and the hotel’s director of culinary and f&b. The shift from soaring galleries to the leafy embrace of Fort Canning signals a new direction. “At the Gallery, we spoke to heritage in a grand civic space. Here, the dialogue is more intimate—closer to nature, more tactile, more evolved,” Sperindio explains.
He envisions the restaurant as “almost a studio”—a pared-back space with fewer tables, designed to immerse guests in the layers of Italian history and hospitality. The park itself serves as his inspiration: “The park is our mood board—green, layered, alive.” While a handful of signature dishes may reappear, the menu will chart new ground, shaped by deeper research and a drive to deliver “a truer Italian fine-dining experience for Singapore and Asia.”

This evolution mirrors Sperindio’s own philosophy. “As we grow older, the noise falls away,” he reflects. “We become less interested in trendiness, and more passionate about shaping something timeless. The French codified that idea; now it’s time to express its Italian soul.”
In Mett Singapore’s boutique scale, Sperindio also sees the chance to realise a long-held dream: a European-style “restaurant with rooms.” While land costs have long hindered such a concept in Singapore, the hotel’s 84-room footprint offers the perfect balance between luxury hospitality and fine dining.
For now, his focus remains firmly on the guest experience. “I want diners to feel cared for like family; to taste a borderless history of Italy through our lens; and, above all, to enjoy a meal that’s simply delicious, leaving with a memory that lingers long after dessert.”
Art di Daniele Sperindio will reopen at Mett Singapore, Fort Canning Park, in December 2025, joining the property’s culinary line-up while remaining the chef’s creative heartbeat.
