Featuring plush interiors, hearty Italian fare and 40-year-old cocktails, this is one opening not to be missed

The upscale ristorante of Rosewood's newly-opened harbourside Italian eatery-slash-emporium, Bluhouse, is now up and running, offering a more elegant dining experience that delves deeper into the rich gastronomic traditions of Italy. Named The Dining Room by Bluhouse, the concept is tucked away behind a curtain but marks a tonal departure from the rest of the larger venue—thanks to a lush interior designed by London-based interior studio Afroditi, resembling the glamorous supper clubs of '60s and '70s that hosted Italian politicians, cinema royalty, and besuited mafiosos alike.

Flanked by a grand cocktail bar at one end and an open kitchen on the other, The Dining Room is defined foremost by a dinner tasting menu (HK$980 for five courses; HK$1,380 for six) by Neapolitan chef de cuisine Giovanni Galeota, formerly of Macau’s Don Alfonso. Expect delicacies like Japanese tuna crudo with Cetara anchovies emulsion; Mezzi Paccheri “Benedetto Cavalieri” pasta with braised octopus; Branzino Mediterraneo; and Sardinian-style suckling pig with honey mustard sauce.

Meanwhile, the a la carte menu offers an expanded selection of hearty Italian favourites like Il Peperone “Mbuttunato” with burrata cheese and Tasmanian black truffle; Piedmont milk-fed veal tartare; and La Fiorentina, a hefty 1.3kg T-bone Scottoma 30-days dry-aged beef with traditional Tuscan trimmings.

To pair, Rosewood's Area Director of Wine, Julien Peros, has curated a wine programme that cherry-picks from all of Italy's major wine-producing regions, including Piedmont, Tuscany, Campania, Puglia, Calabria and Sicily. Those who prefer a side of history with their vino can opt for a label from the Museum Collection—featuring back vintages that have undergone at least 15 years of bottle-ageing—or alternatively, a selection from Castiglion del Bosco, a Rosewood sister property as well as a winery set in the Tuscan countryside.

The cocktail bar will no doubt tempt more than a few guests to sample its menu of mixed libations, which is largely dominated by faithful homages to Italian aperitivos like the Bellini, Negroni, Americano and Cardinale. But for the truest recreation of what the patrons of the aforementioned supper clubs would have sipped on, look no further than the lineup of 1980s vintage cocktails, where classics like the Mi-To, Aperol Spritz, Campari Shakerato and more are created with liquors rested for at least four decades. 

The Dining Room by Bluhouse is now open for dinner between Tuesday and Sunday, with two private rooms seating ten people each available to book.
