7 Adam has a great concept: fusion cuisine in a charming black and white colonial house decked out with artworks by some of Asia's rising stars. The location of the eatery/art gallery is superb. It's one that restaurants would pay an arm and leg to have.

 

In the kitchen, the newly appointed executive chef, Reynaldo Paulinho Arriola, creates fusion fare with a strong European hand (think: Ponzu Caprese of Momotaro and Masala of Cod Fish).

 

Chef Arriola gets it right when it comes to appetisers. Our favourite dish is the Oriental Tuna Tartare Loin which is offered on the lunch menu. It's a fresh and vibrant dish of raw tuna, avocado and mango drizzled with a citrus dressing. The plating is visually stunning with contrasting vivid colours. The Salad Foie Gras was also spot on. The warm pieces of melt-in-your-mouth foie gras were served with warm caramelised spiced apples, on a bed of fresh mixed greens.

The mains, however, could use a bit more focus. The Grilled Atlantic Mackerel was cooked to perfection – crispy skin and moist flesh – but it was served with the rather puzzling accompaniments of potato galette and black truffle buttered rice with diced carrots. The Washimi Wagyu Striploin was essentially a stir-fried dish that was served on a bed of creamy mashed potatoes. The meat was packed with mostly Chinese flavours and included onions, carrots and red and green capsicums.
