In the second part of The Tatler Bar's video series, two of the island's top bartenders showcase their creativity by concocting refreshing tipples using their chosen sake

Sake is one of the most loved Japanese spirits in the world. It's easy to drink too, whether on its own or mixed in a cocktail. Even local bartenders can't resist its smooth and clean taste, as well as its range of flavours that span fruity, citrusy and sweet. That is why it makes sense that for part 2 of our Tatler Bar Challenge, we invited two talented bartenders to dream up a refreshing drink using this Japanese spirit. Here are the refreshing concoctions they came up with:

Uba Zakura

Nashrin Mansor, senior bartender, 1-Atico

Mansor gives his tipple an innovative twist by using yuzu sake and balancing its citrus notes with apricot liqueur and sakura tea syrup.

Ingredients:

  • 60ml yuzu sake
  • 30ml sakura tea syrup
  • 20ml apricot liqueur
  • 15ml lime juice
  • 15ml lemon juice
  • 30ml egg white
  • Fennel & edible flowers (garnish)

Method: 

  1. Mix all ingredients in the cocktail shaker.
  2. Shake well and pour into the glass.
  3. Garnish with edible flowers and serve.

Shiroi Yuki

Vanessa Tan, bar supervisor, The Horse’s Mouth

Tan uses Nigorizake, an unfiltered sake that gives the cocktail its distinct appearance—hence, the name which means cloudy white. It's deliciously addictive especially with the nuttiness that comes from the Amontillado (dry sherry) and sesame milk syrup.

Ingredients: 

  • 45ml Nigorizake 
  • 30ml sesame milk syrup
  • 15ml Amontillado 
  • 1 tsp brown sugar

Method: 

  1. Mix all ingredients in the cocktail shaker.
  2. Shake well and pour into the glass filled with a block of ice.
  3. Garnish with sesame seed and serve.
