What pairs best with a drink in hand? If you thought of chocolate, then you aren't alone. The Macallan, known for its high-quality luxury whiskies, has taken notice of the rich cacao bean and incorporated it into their latest limited-edition drink. The Macallan Harmony Collection Rich Cacao is the first in a series of single malts that are also set to be packaged in fully recyclable and biodegradable material. Having been guided by the principle of sustainability for the past 200 years, The Macallan reinvigorates its promise to keep the earth as one of its priorities by packaging the new drink in cacao by-products. As a tribute to its flavours, the bottle will be encased in a recyclable and biodegradable presentation box crafted from discarded cacao pod husks.

The new drink, which has an ABV of 44 per cent, was crafted by The Macallan Whisky Maker, Polly Logan, after a trip to Girona, Spain. Her journey brought her in touch with some of the most celebrated chocolatiers in Europe. While in Spain, Logan visited pastry chef Jordi Roca's chocolate factory, Casa Cacao. She also brought her research to the expert palate of master chocolatier, Damian Allsop. "Working in collaboration with Jordi Roca, acknowledged as one of the best and most creative pastry chefs in the world, and with exceptional chocolatier, Damian Allsop, I went on a journey of discovery, learning of the craftsmanship, passion, and creativity which goes into making chocolate," she shares. "As I immersed myself in this world, I uncovered a great synergy between the whisky-making process and that of chocolate. Both take time and exceptional attention to detail, with even the slightest changes to the process encouraging different aromas and flavours to emerge."
