Whisky, wagyu and words defined the exclusive dinner that kicked off the third and final instalment of the Blue Vault Dinner series by Tatler Singapore and Johnnie Walker
Up a private elevator and across a bejewelled hallway, lined with art and bottles of wine from floor to ceiling, a select group of guests arrived at the main dining area of Vue at OUE Bayfront. There, under a warmly lit copper barrel vault ceiling, they sat and savoured a four-course dinner prepared by the restaurant for Tatler Singapore and Johnnie Walker’s exclusive Blue Vault Dinner.
The private dinner kicked off the third and final instalment of the Blue Vault Dinner series, a curation of experiences where we collaborate with chefs to craft a special menu inspired by the Johnnie Walker Blue Label whisky.

Above One of the main course options is an A5 Kumamoto "Kokuou" Wagyu beef duo with charred leek and whisky mullet roe butter sauce
From August 10 to 23, we teamed up with European restaurant Vue to showcase the deep flavours of the spirit. Executive chef Sam Chin came up with a menu of dishes that are not only infused with the whisky but also pair well with it.
The dinner started off with a creamy foie gras and whisky gâteaux with apple gel or Norwegian red king crab with apple and whisky gelée and smoked garlic aioli. These were followed by Hokkaido and baby squid glazed with whisky; A5 Kumamoto Emperor “Kokuou” Wagyu beef served with charred leek and a whisky mullet roe butter sauce; and a dessert that reimagined the classic Black Forest cake, topped with a cherry soaked in Blue Label.
And as guests enjoyed dinner and engaged in conversations, a wordsmith typed out personalised poems for them to take home as a memento of a very special evening.
