Tucked inside Percy Seafood, Hello Sailor is an inviting bar that complements the restaurant with some of the island’s best cocktails

The sun’s gentle rays, the sound of crashing waves and a hint of salt in the air—the only thing missing is a masterfully crafted cocktail. Located in Boracay, Hello Sailor is a beachside bar integrated into Percy Seafood (try the crab!) that serves some of the island’s most vibrant and creative mixes. Whether enjoying it alone or alongside the restaurant’s world-class deep-sea catches, this is a spot one should keep an eye out for.

Co-founded by Nowie and Odette Potenciano, these establishments retain their own identity despite sharing the same location. “Percy Seafood and Hello Sailor were developed together to celebrate local ingredients,” Nowie explains. “Percy is the dining element that puts local seafood on a pedestal, while Hello Sailor offers drinks that use the best local fruits and botanicals in craft cocktails.” Guests therefore have the option to either dine in or take a seat at the bar—though nothing is stopping them from trying out both.

David Ong, founder of Curator and Oto, curated the drinks menu of Hello Sailor, headlined by four signature cocktails: Sink or Swim (vodka, mangosteen, coconut, roasted barley, panutsa), Sunseeker (bourbon, mango, elderflower, pineapple, lemon), Float On (basi, tepache, pineapple shrub, soda water) and Fever Dream (pedronan taupey). They are as visually appealing as they are refreshing and tantalising, making them a welcome companion to a leisurely afternoon on the sands.

“Most of the names that we chose for our cocktails are related to being at the beach,” Nowie explains, “because we want to give our visitors a true sense of place and make them feel that they’re having cocktails that belong there on an island.” For Nowie, Float On and Fever Dream best represent Hello Sailor, for their use of local spirits and a dash of modernity. The infusion of local ingredients is meant to make you feel welcome and at ease, not to overwhelm. “The typical Boracay bar falls into either a dive bar or a party and loud music kind of place,” Nowie remarks. “We wanted to create a space that was approachable no matter what time of day.”
