The Dalmore has perfected the art of transferring single-malt whiskies between casks, and it shows in its latest 18-year-old expression. First matured in ex-bourbon American white oak casks, it is then transferred to 30-year-old Matusalem Oloroso sherry casks provided by González Byass, a fine sherry winemaker in Jerez de la Frontera in Spain. The result is an exquisite whisky sultry with honey, vanilla and warm spice, and a deceptively light finish.

The Balvenie has released two new expressions in its Stories range just in time for Christmas. The first, the 19 Year Old “A Revelation of Cask and Character”, is matured in 100 per cent European oak for a rich whisky with profiles of spice and ripe fruit. The second, the 27 Year Old “A Rare Discovery From Distant Shores”, is matured in Caroni rum barrels for a unique, complex sweetness reminiscent of manuka honey and muscavado sugar.
