Typically characterised by the comforting notes of vanilla and caramel, they make for a convenient nightcap served neat, on the rocks, or even splashed into your evening decaf.

Of course, the essential liquor also makes for excellent cocktails that liven up your repertoire. Sure you have classics like the dark ‘n’ stormy and a rum old fashioned, but why not try something new and spice up your evenings at home? Curated by award-winning NYC mixologist Ben Rojo, these four rum recipes are guaranteed to impress the guests at your next cocktail event, even if it’s just a party of one.

1. Manila Vice

What it is: a frozen ode to the iconic show and a fruitful, Thai basil-imbued concoction.

Ingredients

  • Don Papa 7yo Rum
  • Pineapple
  • Coconut Milk
  • Coco-Muscovado Syrup
  • Ice
  • Strawberries
  • Thai Basil
  • Freeze-Dried Coffee
  • Optional Garnish: Pineapple Leaves, Fresh Pineapple Wedge

How to make it

  1. In one blender, combine Don Papa, pineapple, coconut milk, and coco-muscovado syrup with ice and blend until frothy.
  2. In another blender, combine Don Papa 7yo, strawberries, coco-muscovado syrup, and eight leaves of Thai basil with ice and blend until frothy.
  3. Pour the pineapple mixture into a glass rimmed with freeze-dried coffee, then pour the strawberry mixture over in a distinct layer using the back of a spoon.
  4. Garnish with a fan of pineapple leaves and a wedge of fresh pineapple.

2. Golden Hour

What it is: a sorbet sweet smooth drink inspired by Don Papa’s collaboration with boozy ice-cream maker Aubi & Ramsa.

Ingredients

  • Don Papa 7yo Rum
  • Mango Nectar
  • Bitters
  • Ice
  • Chilli Powder
  • Sea Salt
  • Ginger Beer
  • Mango Sorbet
  • Optional Garnish: Toasted Black Sesame, Fresh Mint

How to make it

  1. Combine Don Papa, mango nectar, and bitters in a shaker with ice and shake vigorously to incorporate.
  2. Strain over ice into a highball glass rimmed with chilli powder and sea salt.
  3. Add ginger beer, then top with a scoop of mango sorbet.
  4. Garnish with toasted black sesame and a bouquet of fresh mint.

3. Hearts on Fire

What it is: a smokey cocktail as fiery as it is volcanic.

Ingredients

  • Don Papa 7yo Rum
  • Sour Cherry Juice
  • Quinquina (an aromatised wine such as Lillet Blanc or Cocchi Americano)
  • Lava Salt
  • Ice
  • Optional Garnish: Gold Leaf, Freshly-Torched Rosemary

How to make it

  1. Combine Don Papa, sour cherry juice and quinquina in a rocks glass rimmed with lava salt, add ice and stir until chilled.
  2. Garnish with gold leaf and freshly-torched rosemary.

4. Neon Night

What it is: a blue-toned elixir to capture the words of writer Anca Bautista in her poem ‘An Endless Sugarlandia Summer’

Ingredients

  • Don Papa 7yo Rum
  • Almond Orgeat
  • Yuzu Juice*
  • Blue Curaçao
  • Ice
  • Pebble Ice
  • Optional Garnish: Fresh Dragonfruit Wheel, Freeze-Dried Raspberry

How to make it

  1. Combine Don Papa, almond orgeat, yuzu juice* and blue curaçao in a shaker without ice and shake vigorously to incorporate.
  2. Pour into a glass filled with pebble ice, adding more to create a crown over the glass.
  3. Garnish with a wheel of fresh dragonfruit and sprinkle with crushed, freeze-dried raspberry.

*Can be replaced with three parts lemon and one part mandarin juice.
