Savour these earthy jewels while you can at the White Truffle Sunday Brunch. Oh and don’t forget the restaurant’s seasonal specials, too.
The white truffle from Alba, Italy is a real gem. When added to simple dishes such as pasta or omelette, it enhances their overall appeal with its alluring aroma and earthy flavours. When these knobby mushrooms are in season—October to November—it’s always a big culinary affair with many restaurants tweaking their menus to make full use of this ingredient.
It’s the same scenario at Senso, where group executive chef Sebastian Donati and team are all set to showcase their truffle creations at the annual White Truffle Brunch this Sunday, 27 November.
“We started this brunch four years ago, and we were pleasantly surprised with how well received it was. Since then, it has become our tradition to hold this event when it’s in season,” he shares.
The all-time favourites are back. The taglierini, which the chef painstakingly prepares every day, the beef tenderloin cooked to the right doneness, and the pork saltimbocca are all crowned with generous shavings of the edible fungi.

The chefs have also whipped up something new to delight the palates—from the fresh scallops served with parsnip mouse, crustacean sauce and truffles to the autumn forest and shaved white truffle mushrooms. On top of that, guests will be served with endless flow of premium Ca’ del Bosco Franciacorta and Italian wines from start to finish.
Donati admits that the restaurant gets fully booked quickly on this one-day event. For those who unable to make it, seasonal specials are available until December. While the offerings are not as extensive, they have selected the best dishes for the five-course menu.
The best of their classic and contemporary dishes begin with the succulent and pan-seared capesante (scallops) served with eggplant mousse, sliced green apple, shaved white truffle and dressing. For the other highlights, you can count on the crema di zucca, a butternut pumpkin soup with ricotto, coppa crisps and shaved mushrooms, and the Monte Bianco, which indulges with its chestnut cream, meringue Chantilly cream, salted caramel, bourbon vanilla ice cream, and shaved white truffles.
