The chef-founder’s exceptional menu will be available at Flutes Restaurant from March 29 to April 29

As Singapore slowly opens up to the world, international chefs are bringing their culinary experiences to the island via restaurant pop-ups. The latest one on our radar is two-Michelin-starred establishment Restaurant Story, whose chef and founder Tom Sellers will host a four-week culinary residency at Flutes Restaurant in April.

Typically booked out six months in advance in its London outpost, Restaurant Story has drawn gourmands for its creative menus that put the spotlight on Britain’s best seasonal harvest. In Singapore, Sellers aims to showcase these with an exceptional menu that will tell their “culinary narrative in the context of Singapore’s oldest museum”. Sellers will personally helm the kitchen and will be assisted by his core team of chefs, as well as general manager Ursula Ferreira, who will be running the dining room.

Diners can expect to savour some of Sellers’ signature dishes such as Paddington Bear, his homage to the character’s favourite marmalade sandwich elevated with the addition of foie gras and cardamom, and Rabbit Sandwich. The latter was inspired by the chef’s childhood memories of hunting rabbits with his dad and using the meat for stew. His updated version features the leg coated in polenta then tossed with citrus pickled carrots and tarragon emulsion

The extensive wine list—which is created with the help of Restaurant Story’s head sommelier Jonathan Kleeman and wine bar Park90—features handpicked labels that pair well with Sellers’ playful and innovative dishes.
