Experience dining in a new light at this rooftop bar and restaurant on Sentosa where nightly fireworks are complimentary

Champagne mojitos are just one of the sparkling conversation starters at SkyLoft. Its other obvious attraction is the location on Siloso Beach, right opposite Sentosa's Song of the Sea attraction, which delivers two doses of fireworks and laser beams every night.

Diners may choose to sit indoors or al fresco on the outdoor deck, depending on the mood and weather. Either way, a good way to begin your meal is with the iPlatter, a generously sized serving of foie gras terrine, parma ham, cod, honey chicken wings and cheese - the rather eclectic selection aims to please most palates, and generally succeeds in doing so. For more sophisticated fare, look to the mains, where saffron cod, wagyu steak tartare and cote de boeuf (for two to four persons) can be found. The opening menu seems to excel at seafood, with seven types of mussel pots served in 350g portions and the fish dishes taking our fancy.

Rounding off the selection nicely are desserts that range from rum and dark chocolate mousse that had great texture and balance, to an aromatic vanilla and lemongrass pannacotta.

Fans of the local music scene will enjoy visiting from Thursdays to Saturdays, when bands Jack & Rai, Shirlyn and the UnXpected, and Sara & 53A perform; at other times, a live DJ spins chilled out tunes for lingering over more of those champagne mojitos.
