The latest additions to the à la carte menu at this Italian restaurant throw the spotlight on sustainably-sourced ingredients.
While other Italian restaurants trumpet the same old refrain of handmade pasta and imported produce, Pontini has gone one step further to showcase dishes made from sustainably-sourced ingredients. Iranian caviar, European sea bream, and French pigeon are but a few items on the menu that shave some guilt off the mind of the eco-conscious diner.
If you have not visited Pontini recently, Chef Daniele Sarno’s latest additions to the à la carte menu give you good reason to do so. Distilling the essence of the sea, Sarno presents Mediterranean bluefin tuna tartare on a bed of marinated Hokkaido scallop. Oscietra caviar adds a finishing touch to this delicately woven appetiser.
Creamy pillows of burrata ravioli is paired with a capsicum velouté while perfectly cooked risotto is framed by an Italian saffron infusion, stracchino cheese, and chives.
For dessert, head over to the chocolate station, where six different varieties of Amadei chocolate — the finest Tuscany has to offer — can be savoured alongside a selection of Italian liqueurs.
