Who doesn't welcome a little star-power? Celebrity Chef Cat Cora (who, by the way, really deserves the 'celebrity' tag) is somewhat of an American hero. She was elevated to stardom on “Iron Chef America” where she was the first and only female chef to receive the title as Iron Chef. Since then, she has opened five restaurants throughout the United States and has worked alongside the First Lady, Michelle Obama, on the campaign closest to Mrs Obama’s heart, Chefs Move to Schools.
Second, Chef Cora is ever faithful to the ethos of sustainability. All produce in Ocean Restaurant is ethically sourced and plucked from farms from as near to Singapore as possible.
Third, the views from this restaurant are simply unparalleled. The narrow restaurant's longest side contains floor to ceiling windows with a view into the world's largest oceanarium. It is simply breathtaking, and to have the privilege to dine with such a sight is majestic.
“The menu is characterized by light, simple and healthy dishes, using the freshest produce from around the region”, says Chef Cora. “Studying the Asian palate, I have incorporated some local elements and ingredients in one of my signature dishes, the Coq Au Vin Asia. It is a dish that features lemongrass-sake braised spring chicken with roasted ginger accompanied with Thai chilli and young bok choy.”
Not surprisingly, Chef Cora's food is seafood-heavy and her Mediterranean-Californian cuisine is updated with Asian nuances. Her dishes are uncomplicated and possess clean and defined flavours.
The Vongole of Manila Clams is a simple, albeit well put together dish. It is a comforting clear broth carrying the familiar flavours of garlic, chorizo and toasted sesame. We also loved the melt-in-your-mouth Sous Vide 48°C Ocean Trout that is served with caviar, Prosecco pear, crushed almond, vine tomato jelly and garden cress.
