Presenting, the melon chashu bun: a limited collaboration by Mendokoro Ramenba and Japanese bakeshop Kumori. Served with spicy homemade mustard, zingy pickled onions, and crisp lettuce, the sandwich is at once delectable yet well-rounded, complemented by bright flavours that cut through the rich pork belly. Meanwhile, Kumori's melon pan adds a welcome sweetness with its milky, pillowy interior, which wonderfully contrasts its crusty exterior topped with black sesame seeds and the bread's hallmark cookie crust.
