Gaggan Anand has always been a culinary rebel who gifted the F&B world with innovative dining concepts like Gaggan, which serves up contemporary takes of classic Indian dishes in a fine dining environment, and Ms Maria & Mr Singh, a more casual joint which merges the flavours of Indian and Mexican cuisines.
Many of us have had a taste of Gaggan restaurant after his successfully culinary residency at Mandala Club. From October 24, we will be able to savour his home-style Mexican and Indian cooking with the opening of Ms Maria & Mr Singh in Singapore. This is Gaggan’s first permanent space in Singapore and is a collaboration with local hospitality group, The Proper Concepts Collective.

Ever the innovative chef, Gaggan’s cross-cultural dining theme is based on a fictitious love story between Ms. Maria, a Mexican girl, and Mr. Singh, an Indian boy. That said, the restaurant was designed to look like the couple’s home and is swathed in colours of orange and blue to represent the cities of Oaxaca and Jaipur.
The fusion of cultures is also showcased on the menu, with familiar dishes like papdi chat, a popular Indian street food comprising crisp fried puri, sweet and sour chutney and yoghurt; and crab curry, a coconut- and coriander-based curry dish enriched with shallots, tomatoes, tamarind and juicy chunky crab meat.
