Chan Gan Wei, Yuko Chan, Sharon Lim

Haute horlogerie and fine dining might refer to two different worlds, but on September 27 they collided to great effect at the Hautlence X Cortina event held at one-Michelin-starred Labyrinth in partnership with T.Dining by Singapore Tatler. The theme, Bold & Innovative, which best describes the watch brand's dynamic designs and its ability to keep up with a bolder market, also transcended into the menu crafted by chef-owner Han Liguang and guest chef Jimmy Lin (who helms ModSin JL Studio in Taiwan).

Says Han, “ModSin cuisine fits very well with the theme because we took familiar things (food) and served them in different expressions.” The starter of Chef’s Favourite Street Food featured kueh pie tea served with rose shrimp, and a "heartland waffle" topped with a local duck liver pate and goji berry jam. Mains included Uncle William’s Quail bedecked with a satay espuma, muah chee and pearl onion, and a Taiwanese Mala beef dish that featured tender A4 Hokkaido wagyu striploin.
