It’s just past 10pm on a Friday, and Guillaume Gallas is making his rounds. The general manager of Mondrian Singapore Duxton moves between the lobby and Jungle Ballroom, meeting fashion insiders, creative locals and travellers who’ve descended on one of Singapore’s trendiest cultural collision points. This is the Mondrian Singapore Duxton as Gallas envisioned it—not just a place to rest one’s head, but a “creative clubhouse” where the city meets the world.

“We’ve redefined what a hotel can be,” says Gallas, whose background spans vibrant cities and properties from Tokyo to Oman, each experience layering into his current vision. “From launching immersive dining experiences to curating events that spotlight local creatives, we’ve built a space where locals mingle with global guests, all drawn together by energy and curiosity.”

The transformation didn’t happen overnight. In a market where service traditions run deep and hierarchies are respected, Gallas faced the delicate task of shifting perceptions while maintaining the foundations of luxury hospitality. “One challenge is shifting the mindset from hotels as ‘formal’ to ‘fluid’,” he says. “In a market where service is traditionally structured and hierarchical, we’ve embraced a more relaxed, emotionally intuitive approach.”

This philosophy permeates every corner of the property, from its art collection featuring Singaporean names to culinary nods to the local heritage. It is Mondrian’s global voice speaking with what Gallas calls a “Singaporean accent”.

This approach attracts guests who seek cultural experience over polished perfection. “They want stories, soul and spontaneity,” Gallas notes. “So we give them that: local and international music scenes, chef collaborations, unexpected art in every corner.”

At Canyon Club, the rooftop bar and one of Gallas’ favourite spots on the property, this ethos comes into sharp focus. As the sun sets and the skyline glows, the space becomes a cinematic pre-dinner destination. And as the evening deepens, it transforms into a late-night social hub. “Whether you’re starting your night or wrapping it up, Canyon Club has that blend of energy and escapism that keeps you coming back,” Gallas says.

His approach to hospitality leadership is human-centred. “Soul is something you can’t write into a standard operating procedure (SOP)—it’s what happens above and beyond the checklist,” he says.

From guests, he hopes for a different word entirely: “flamboyant”. Not over-the-top theatrics, but genuine colour and personality that ensures stays are not only comfortable but unforgettable too.
