To celebrate its newly refreshed interiors, The St. Regis Singapore partnered with Tatler Singapore for a Midnight Supper that gathered tastemakers and cultural leaders for an evening of refined glamour and timeless rituals
The St. Regis Singapore unveiled its refreshed interiors with an intimate Midnight Supper in partnership with Tatler Singapore—an evening celebrating culture and the timeless elegance embodied by both institutions. Held at Caroline Mansion on November 14, the event gathered global connoisseurs, cultural leaders, and friends for a night defined by thoughtful curation and exquisite detail. The supper also marked the hotel’s reemergence as a contemporary symbol of luxury, expressing The St. Regis ethos of Live Exquisite through immersive experiences and refined indulgence.
Guests arrived to a transformed foyer, where the Vocalise String Quartet set a graceful prelude to the evening. Sculptural florals and candlelit gold accents lined the staircase, creating a dialogue between the romance of the Gilded Age and the tropical beauty of the nearby Singapore Botanic Gardens, which serve as an inspiration for the hotel’s renewed interiors. Mixologists behind martini trolleys brought one of the hotel’s signature rituals to life, serving bespoke cocktails.

The evening began with remarks from Nick Heath, General Manager of The St. Regis Singapore, who reflected on the origins of the Midnight Supper, describing it as “the original after-party; a cherished tradition created by Mrs. Caroline Astor, mother of our The St. Regis founder and doyenne of New York’s Gilded-Age society. [Astor’s] legendary galas would often conclude with intimate Midnight Suppers gatherings reserved for a select few, where conversation flowed as freely as champagne.
This was followed by an address from Stephanie Tay, Managing Director of Tatler Singapore, who expressed gratitude for the partnership and reflected on the natural alignment between both brands. She noted that Tatler was “truly delighted to be part of this special soirée”, highlighting how the evening embodied the elegance, connection and timeless glamour shared by The St. Regis and Tatler.
Tay spoke of the longstanding appreciation for heritage, excellence and the art of living well that unites the two institutions, adding, “We’re thrilled to collaborate with such an iconic global brand for an exquisite short film featuring Fiona Fussi, that you'll see at the end of the year across all of Tatler Asia’s platforms.”
She closed with a toast to the future: “Here’s to more meaningful collaborations, unforgettable experiences, and continued success ahead.”

As the doors to the dining room were opened in synchronicity, guests stepped inside a nocturnal garden, where long tables stretched across a candlelit “landscape in miniature” dressed in sculptural exotic local florals, surrounded by towering trees, lush greenery, and gilded accents.
Greeting them were jazz vocalist Carol Gomez, who filled the room throughout the night with warm, soulful sets that recalled the ambience of mid-century supper clubs.
In true St. Regis fashion, an evening ritual then marked the transition from welcome to supper: a champagne sabrage performed by the St. Regis Butlers, followed by a dramatic tower pour that sent a cascade of bubbles through the candlelit ballroom as a sparkling salute to Caroline Astor’s legendary gatherings and the hotel’s next chapter.
Dinner began with smoked Alaskan king crab unveiled through synchronised cloche service, followed by prime beef tartare with tableside white truffle shaving. Seared Hokkaido scallops and dry-aged duck followed in seamless rhythm.
The supper reached its theatrical crescendo with a Baked Alaska flambée. Whole desserts were showcased atop sculptural plinths before erupting in flame in a synchronised display—a nod to the celebratory spirit of St. Regis rituals.
As dinner concluded, Nick Heath welcomed guests to continue the night in true St. Regis style, remarking, “Now in true Caroline Astor fashion, we go to an afterparty at The St. Regis Bar. I would like to thank you for your friendship, creativity, style, design … let The St. Regis live on.” With that, the celebration flowed into an elegant after party.

Guests then made their way to The St. Regis Bar Singapore, where the night continued with signature cocktails from the “Time After Time” collection, a dialogue between Singapore and New York that carried the supper into a refined after-hours affair.
More than a showcase of refreshed interiors, the Midnight Supper reintroduced The St. Regis Singapore as a modern icon of luxury. In partnership with Tatler Singapore, the evening celebrated legacy, creativity and the pursuit of living exquisitely, with many more stories set to unfold in the journey ahead.
