Vicky Cheng is undoubtedly one of the finest chefs in Hong Kong at the moment. His culinary stardom is fuelled by his unique and progressive marriage of French and Chinese cuisine, executed at the highest level, at both award-winning restaurants Vea and Wing. Most recently, Cheng bagged the “Chef of the Year” award at the Tatler Dining Awards 2024 in Hong Kong, adding to his already flourishing personal highlight reel.

Following a two-night exclusive gastronomic collaboration with master chef Alan Chan of Cassia at the verdant grounds of Capella Singapore, Tatler Dining caught up with him to find out where he frequents for the best supper in Hong Kong after concluding an arduous shift in the kitchen—in your case, perhaps a night’s worth of playful imbibing. “From the cooks in the kitchen to the waiters in the dining hall, this restaurant is still run by the original proprietors—currently third-generation. It only opens for dinner till very late at night and the menu is mostly made up of fresh seafood that is expertly prepared in the traditional Boat People style. My usual order is the typhoon shelter crab and the roasted duck meat with homemade white noodles. The cook is consistent every time I visit. The restaurant sources fresh seafood daily which means it is sold on a first-come-first-serve basis. I recommend pre-ordering your cravings upon reservation to avoid any disappointment.”

Kyoto-Oden Masa

“I like coming to this supper joint, especially during the winter season, for a warm and comforting serve of Japanese oden. The clear broth is rather distinct and delicate to taste. My order usually consists of Japanese daikon, yam konjac, bean curd bag, tamagoyaki and of course, the mochi to finish.”

“This Japanese skewer bar has a great atmosphere for unwinding after a long day in the kitchen. I’ll sit by the bar counter and watch the chefs prepare the dishes—this is one of the best kushiage (fried skewer) spots in Hong Kong. Besides the seafood skewers, you must not miss the fried chicken wings and the signature scallop salmon roe. Of course, wash it all down with some sake or some special shochu. The owner is a sake and shochu lover so naturally, the selection here is well-curated, boasting a wide variety of sake.”

Chiu Hing Restaurant 潮興魚蛋粉

“There are many branches but I frequent the outlet on Jaffe Road in Causeway Bay. It is a hole in a wall that is perfect for a quick and authentic bowl of noodles late in the night—open till 6 in the morning. While the longstanding signature is the fishball noodles, the beef brisket noodles—with a side of offal—is my go-to order.”

“At the helm, the Japanese chef-owner ensures every dish is made upon order. The lively ambience is matched with great food and of course, beer, which makes for the perfect after-work joint to hit up with my peers. My usual orders are the okonomiyaki and teppan-grilled shrimp.”
