Mireio’s set menu dinner includes tuna carpaccio with truffle vinaigrette and green apple pickles; chestnut velouté with noily prat, mushroom and foie gras ravioli; seared codfish fillet with grilled and purée butternut squash and watercress emulsion; Wagyu beef tenderloin with compressed potato tossed in aged parmesan and red wine sauce; and Vanilla and berries twist with mixed berries sorbet for dessert.
