1. Labyrinth

Join chef-owner LG Han of Labyrinth as he joins hands with chef Chele Gonzalez of Gallery by Chele in Manila for a one-night only dinner on May 4. Melding Han’s innovative brand of modern Singaporean cuisine, Gonzalez’s passionate championing of Filipino flavours, and their shared sustainable philosophies is a natural extension of their seven-year long friendship that saw a previous collaboration in Manila last year.

Savour exclusive delights like the octopus inasal, which sees octopus char-grilled to smoky perfection swimming in a rich and spicy laksa sauce. Dessert takes an unexpected turn with cereal prawns, a local zi char favourite, sitting atop pandan panna cotta and mango.

2. Gotti

Experience the best that luxury has to offer at Gotti, which is offering an exclusive truffle and wine dinner on May 4. Black truffle reigns supreme here, infused in a truffle mash alongside an exquisite Wagyu carpaccio as the first course, then shaved over seasonal Holland white asparagus, prosciutto di parma and gorgonzola in the next course. Save space for the wild forest mushroom risotto, swimming in a truffle cream sauce that astonishes with its rich burst of umami. 

The experience is elevated with a curation of Tuscan wines, complementing the bold flavours of the truffle. The Montecalvi San Piero IGT Toscano 2016, for instance, is a bracingly tannic and bold red to complement the Australian grain-fed beef tenderloin, with a savoury Diane sauce, endive, and potato grata. A rich Pietro Zardini - Recioto della Valpolicella Classico 2020 pairs perfectly with the equally decadent chocolate lava cake, drizzled with chocolate syrup and sprinkled with pistachios and berries.

Tiki bar Low Tide is changing it up with a bold new tropic food menu that takes inspiration from all over the world. Under culinary anthropologist Nithiya N Laila’s creative direction, Low Tide’s new menus pull together flavours from the Caribbean, East Africa and the Asia-Pacific, tied up with European gastronomic techniques. 

Feast on dishes such as the Fisherman’s Catch, a citrus-cured ceviche with torched jalapeños and coconut dressing that’s both delightfully acidic and rich. Sink your teeth into the Portoro, a 36-hour sous-vide short rib dressed in a luscious rendang butter marinade. A cocktail is a must—the Piña Clearada is a good choice, a sweet and tart concoction of a clarified piña colada with Bacardi Carta Blanca, coconut and lime.
