Above La Brasserie’s Festive Weekend Brunch
As the holiday spirit fills the air, The Fullerton Hotels Singapore will showcase a diverse selection of gourmet delights across both venues, designed to cater to every palate. For one, The Fullerton Hotel Singapore’s Town Restaurant will serve up festive lunch and dinner buffets that spotlight seasonal delights like roast whole turkey with trimmings, honey glazed ham, eggnog tart and more. Those looking to savour premium seafood can head to The Fullerton Bay Hotel Singapore’s La Brasserie. Alongside delectable seafood, anticipate plates of beautifully pan-seared foie gras, crabcakes with herring caviar, and creamy carbonara with black truffle.
A range of Christmas menus are available come Christmas Eve and Christmas Day. Town Restaurant and Jade are taking holiday feasting to another level with The Christmas Day Big Brunch. Dig into a delectable spread featuring Eastern and Western specialities such as Jade’s signature Peking duck and Town Restaurant’s beautifully roasted Christmas turkey. On top of festive favourites, you’ll also find classic plates including Town Restaurant’s Boston lobster laksa, spicy chilli mud crab with mantou, and Jade’s five-spice roast pork char siu. When it comes to sweets, you’ll be spoilt for choice as the hotel’s The North Courtyard transforms into a dessert wonderland with creations like traditional stollen, Christmas pudding, maple pecan chocolate tart and more.

In addition to its dining options the hotel also introduces a new afternoon tea spread at The Fullerton Hotel Singapore’s The Courtyard and The Fullerton Bay Hotel Singapore’s The Landing Point. Both Festive Afternoon Tea spreads serve up a beautiful selection of sweet treats inspired by the festive season. Dig into bite-sized gems including Reindeer, a chocolate mousse tart topped with crushed pecan; and Snow Forest, comprising ivory chocolate, creme cheese and citrus curd.
Sweets are paired with savoury bites at The Courtyard, anticipate treats like the King prawn with caviar while over at The Landing Point, expect creations like the Boston lobster on fluffy brioche topped with Nomad caviar. Wash these treats down with flutes of champagne, available at an additional cost.

If you prefer enjoying your festive meals in the comfort of your home, why not opt for The Fullerton Hotels Singapore’s Festive Takeaway Collection? Its Festive Brunch at Home is perfect for six and offers over a dozen dishes ranging from appetisers to desserts—think roasted baby chicken, poached seafood and traditional stollen.
Each year, the hotel’s culinary team dreams up a locally inspired turkey and this year is no different. Its Roast Turkey Pongteh is a festive take on the beloved Peranakan classic, comprising beautifully slow-roasted turkey marinated and slathered with an umami fermented bean gravy. The juicy bird comes accompanied by pumpkin rice, house-made sambal belacan and belinjau crackers.

No holiday celebration is complete without sweet indulgences. The Fullerton Cake Boutique will offer a selection of occasion-worthy centrepieces like the Noel. Making its debut, this sweet treat sees beautiful layers of strawberry yoghurt mousse, yuzu creme, vanilla sponge and lemon-vanilla croustillant. The mouthwatering treat is adorned with a meticulously hand-sculpted chocolate sleigh.
An extensive selection of yule logs also awaits. On top of its favourites, the boutique introduces two new flavours: calamansi chocolate caramel nut yule log and yuenyeung yule log. The former is a refreshing treat, filled with calamansi curd, gianduja creme, salted caramel and chocolate sponge. The latter is inspired by the classic Hong Kong beverage, comprising teh-infused joconde sponge and kopi ganache made with The Fullerton Blend coffee beans.
Speaking of refreshing takes on classic desserts, the boutique introduces its pandan kaya panettone. A local spin on the Italian Christmas bread, the panettone comes filled with aromatic house-made panda kaya and gula melaka. The light and fluffy treat comes topped with toasted coconut.
New Year’s Eve and New Year’s Day offerings

As the year comes to a close, The Fullerton Hotels Singapore is set to host extravagant countdown celebrations to ring in 2025. Visit The Lighthouse on New Year’s Eve (NYE) and savour a six-course degustation menu. Get to dig into Carabinero prawns topped with N°25 Oscietra Caviar and tender charcoal-frilled Miyazaki beef stripling with vanilla whisky jus. After the hearty meal, head upstairs to the rooftop and countdown to the new year with live DJ performances and panoramic views of the fireworks display.
Jade’s Chinese executive chef Leong Chee Yeng is celebrating the new year with the New Year’s Eve Starlight Dinner. The five-course meal showcases premium ingredients such as fresh abalone and grade-4 Kagoshima wagyu beef. Save room for dessert and savour a trio of sweet treats including the deep-fried red bean hedgehog bun.
Lantern’s beloved NYE Rooftop Party returns on December 31 with an exciting line-up of international DJs. Here, take in breathtaking views of Marina Bay and the fireworks display.

Come New Year’s Day, head to Town Restaurant for its New Year’s Lunch spread or visit Jade for hearty plates of dim sum. La Brasserie is joining in on the festivities with its New Year’s Day Champagne Brunch. Start with fresh seafood such as Boston lobster, Alaskan king crab leg and red crawfish. Then, head to the caviar bar and savour bumps of Kaluga caviar, Avruga caviar and more. If meat is your protein of choice, visit the carving station for slices of ribeye, roast duck and turkey. You’ll want to save room for dessert and savour the likes of sticky toffee pudding, pumpkin spice cheesecake and maple pecan tart.
