Duet by David Toutain advances its culinary identity with two new tasting experiences conceived by Chefs David Toutain and Valentin Fouache.

Known for its culinary evolution, The Ritz-Carlton, Bangkok’s signature restaurant, Duet by David Toutain, has been more than a restaurant; it has been a living conversation between nature and the plate. At Duet, the ingredient is the protagonist. The philosophy is built on the pillars of transparent sourcing and an unwavering respect for the rhythm of the seasons. This connection to the earth is tactile: guests receive provenance cards at the table, transforming each course into a narrated journey from artisan producer to the refined confines of the dining room.

The Evolution of a Culinary Identity

Two menus, one philosophy—Duet by David Toutain, led by the vision of Chef David Toutain and Chef Valentin Fouache, unveils a defining new chapter in its culinary evolution. Grounded in the rigorous traditions of French gastronomy, both chefs share a meticulous passion for detail: where classical discipline, structure, and the art of the sauce form the backbone, all viewed through a modern and deeply personal lens.

‘The Signature Menu’—the most profound expression of Duet’s soul. Through the shared culinary vision of both talented chefs, it portrays the restaurant’s most emblematic creations and finest seasonal ingredients. With three impeccable dishes anchoring the Signature Menu as expressions of Duet’s strongest identity. ‘Alaskan King Crab’, is illuminated by the clean salinity of Shadi Schrenki caviar and delicate cream-infused pearls. The dish finds its balance through a whisper of vanilla and the citrus brightness of kaffir lime—aromatic notes that provide a serene contrast to the richness of the crab. ‘Brittany Blue Lobster’ is a masterclass in unconventional pairing. Here, épicéa (spruce) is reimagined; rather than providing woody notes, the needles are treated as a citrus element to coax out vibrant lime zest and soft resin. This aromatic brightness is balanced by a luxurious, velvet-smooth homardine sabayon and the crisp garden-freshness of brassica. Lastly, A delicate ‘Normandy Scallop’, seared over glowing embers, anchors this intricate dish. It is served alongside cauliflower and an artisanal X.O. sauce, crafted through a slow infusion of premium dried seafood to create an unfolding narrative of flavour. Finished with the rare, oxidative notes of Jura yellow wine, it is a masterclass in balance and textural contrast.

While ‘The Discovery Menu’ is more likely a concise revelation of Chef Toutain and Chef Fouache’s vision, it serves as a vibrant showcase of ‘the now.’ It is a lighter progression that refuses to compromise on the precision that defines the house. Because the menu is dictated by the natural rhythm of the seasons, it remains in a constant state of elegant evolution—offering returning guests a fresh perspective with every visit. Personal touches and bespoke choices further ensure that this discovery is uniquely your own.

The Art of the Pairing

The experience is further elevated by Duet’s sophisticated beverage programme. Guests may opt for an Alcohol Pairing curated to enhance the structural nuances of the sauces, or a Zero-Proof Pairing, proving that non-alcoholic compositions can possess the same complexity and ‘terroir’ as a vintage wine.

In the hands of David Toutain and Valentin Fouache, dining transcends the plate to become a profound reflection of the natural world. Duet does not simply serve a menu; it orchestrates a dialogue between the heritage of French craft and the raw, seasonal purity of the ingredients. Whether choosing the expansive Signature journey or the agile Discovery progression, guests are invited into a space where every detail is a masterclass in balance. At The Ritz-Carlton, Bangkok, the table is set for an experience that is as intellectually stimulating as it is undeniably delicious—a true duet of soul and skill.
