1. Homura by Kai
Suguru Ishida, founder of Yakiniquest
“The greatest charm of Homura is that you can casually enjoy dishes made from carefully selected ingredients, meticulously prepared by highly skilled chef Araki-san. ‘Homura’ means ‘flame’ in Japanese, and true to its name, the highlight is the ‘warayaki’ (traditional straw-smoked grill) dishes, which are prepared right in front of you over the counter. You must try the warayaki tuna cheek and the signature donabe (clay pot rice), which varies from unagi and nodoguro to hairy crab, depending on the season.
Another must-order one is the dashimaki tamago. It’s a basic dish found in many izakayas, but Homura’s will surprise you with its difference. Food aside, the counter-style seating allows for close interaction with the chefs and the enjoyment of watching them cook live. The staff is also attentive and provides exceptionally pleasant service.”

2. Apollon
Makoto Arami, executive chef of Ami Patisserie
“Apollon is a hidden counter-style Japanese izakaya that makes me feel like I am back in Japan. The super cosy space comes with great food, sake and friendly company. I always order the chicken karaage which is prepared using fresh chicken only. The secret breaded coating makes it so delicious—perfect when paired with a highball drink. Over time, after countless visits, I became close friends with the owner Tohyama-San. This izakaya holds a special place in my heart as everything there is of high quality.”

3. Hearth
Taro Takayama, executive chef of Takayama
“I’m often at Hearth for dinner or supper. Chef-owner Koki Miyoshi’s menu showcases many dishes with a combination of ingredients that are not typically served at most izakayas. My usual order is the radish oden, a dashi-simmered Japanese radish. While it may look simple, Miyoshi-san’s skills and attention to detail are impeccable. At first bite, delightfully soft textures are complimented by light-seasoned soy sauce. If it’s your first time, consider going for the chef’s omakase. The beverage selection isn’t like most izakayas in Singapore as it boasts a rather unique selection. Aside from sake, I always go with the ume sour, featuring ume plum from Wakayama. The plum is ripe and sweet but not overpowering which pairs well with most dishes.”

4. Tamaya Dining
Kenji Takahashi, executive chef of Zuicho Singapore
“Tamaya Dining may be known for offering high-quality ingredients and a premium dining experience at an affordable price. But the exceptional hospitality, which makes me feel welcomed and well-taken care of, keeps me coming back for more. There are plenty of Japanese izakaya snacks to choose from, including fresh seafood delivered directly from the Toyosu Market and beautiful seasonal vegetables. My favourites are the marbled Omi Wagyu beef, succulent Hokkaido pork belly, and fresh vegetables, paired with some Japanese sake. I fondly remember celebrating with my team over a hotpot feast with uni shabu, which reminded me of Tokyo, after a long day of work.”

5. Towa
Takeshi Araki, executive chef of Esora
“I enjoy going to this particular Japanese izakaya and teppanyaki restaurant because the atmosphere reminds me of local izakayas in Japan. Food is also delicious and is comparable to the standard of what you would expect from an izakaya in Japan. My go-to order is the tsukemen, perfect to remedy Singapore’s hot weather. I will also always order a drink to pair as they stock a good selection of Japanese sake sold at great value. I often dine together with chef friends like Nicolas Tam from the one-Michelin-starred modern Asian restaurant Willow, which is conveniently located on the same street. He loves to dine in this izakaya as much as I do.”
