Luce’s chef de cuisine Andrea Rossi promises a bountiful buffet spread, reminiscent of the rich Italian mecca for food and wine

Boasting an impressive two-decade career at esteemed kitchens across the globe, and having lived and worked in Asia, the Italian chef is adept at injecting these collective influences into his cooking.

Trays of fresh seafood on ice, studded with lobsters, snow crabs, and oysters, greet diners once they step inside the restaurant. The underwater treasure trove includes a colourful selection of sushi and sashimi, lending a Japanese influence that is loved by many. A slew of open kitchens, live cooking stations and carving tables, transform each visit into an interactive spectacle, where chefs assemble mouthwatering dishes à la minute. Think epic roasts of beef, chicken and lamb, and the signature cacio e pepe tossed in a giant cheese wheel.

Among the headlining offerings is Rossi’s signature pinsa, a Roman-style pizza that is crispy on the edges and airy in the centre. Dishing out up to six flavours at once, Rossi is often seen personally making the pizzas by the hearth. He recommends the zucca e salsiccia picante, topped with smoked scarmoza, spicy Italian sausage and pumpkin cream for a sweet and savoury number. The aromatic la tartufuta is another crowd-pleaser, comprising generous servings of black truffle paste, wild mushrooms, smoked scarmoza and cream.

And for those seeking heartier fare, indulge in classic Italian specialities that promise a journey from the North to the South. Feast on the comforting lasagna alla bolognese; cacciucco di mare, a Tuscany-inspired spicy tomato seafood stew; pollo arrosto, a succulent roast of marinated spring chicken redolent of garlic and rosemary; and ravioli rartufati, pasta stuffed with ricotta, lemon and truffle cream.
