But at Man Fu Yuan, an establishment long considered a beacon of Cantonese cuisine, the seemingly ordinary barbecued pork is lifted out of its prosaic status into a realm so glorious that it is worthy for an emperor.   

Made entirely out of prized Ibérico pork collar, Man Fu Yuan’s honey-glazed char siu is infused with smoke and roasted till the exterior is perfectly caramelised. Each tender bite reveals a heavenly explosion of sweet and savoury flavours that leaves the palate yearning for more.

The dish is one out of many exquisite creations masterminded and meticulously crafted by executive Chinese chef Aaron Tan for the stalwart restaurant’s latest menu. Under his skillful hands, classic Cantonese fare is renewed, refreshed and reinvigorated. Building upon centuries-old techniques and culinary know-how, the new menu continues Man Fu Yuan’s 30-year homage to one of Chinese cuisine’s “eight great traditions”. 

Paying special attention to the key elements of traditional Cantonese cuisine, in particular its emphasis on aroma, every dish on the menu from roast meats to soups is a treat to the senses.

To bring out the natural goodness of each ingredient, the chef opts not for heavy sauces and seasonings, but instead focuses on precise techniques and immaculate presentation. The crispy rock lobster, for instance, features a succulent and plump rock lobster fried ‘typhoon shelter’ style. Its companions, golden crispy garlic and dried chilli peppers, provide not just layers of texture but also an addictive fiery kick. 

With nutrition at the centre of Cantonese soup philosophy, the broths are painstakingly simmered to extract the maximum flavour and health benefits from its precious ingredients. The braised Sarawak bird’s nest with crab meat soup, a luxurious treat for the tired soul, is further elevated by crab roe and Chinese cured meat, exemplifying the chef’s laser-sharp dedication to culinary finesse and refinement.

In the restaurant’s intimate private and semi-private dining rooms, every meal becomes a regal affair, further perfected by its selection of fine wines and premium teas.
