Tatler Dining proudly launches our sophomore iteration of Tatler Dining Kitchen with a two-night-only event featuring chefs JP Cruz of Inatô (Tatler Best Philippines Rising Star and Restaurant of the Year 2025), and Chele González of Gallery by Chele (Tatler Dining’s Chef of the Year 2023).
Tatler Dining Kitchen is a Tatler Asia project designed to deliver discerning foodies coveted, limited edition, pop-up dining experiences. For our first Tatler Dining Kitchen activation in 2025, we present an exquisite tasting menu adventure created by two of the country’s most respected and talented chefs. JP Cruz and Chele González have collaborated to produce a stunning seven-course menu that makes use of spectacular seasonal ingredients from around the world, which they will skillfully manipulate to express fresh perspectives on local flavours.

“We’re crafting a menu that reflects a dialogue between our two kitchens—bringing together premium ingredients from around the world, but the heart of the experience is still deeply rooted in Filipino flavours and traditions. The foundation is local: flavours, techniques and stories from the Philippines interpreted with care and respect,” says Cruz.
“In Gallery, we don’t claim to cook Filipino cuisine, but Inatô creates Filipino food, using global ingredients, so I proposed going down that route to try something new, since at Gallery we cook Southeast Asian flavours, but use only local produce. In this collab, we will cook global ingredients to create beautiful local flavours,” González expresses.

At Tatler Dining Kitchen, expect new and exciting dishes you won’t be able to try anywhere else and have not tasted at any of their restaurants. Both chefs are seasoned collab veterans, having engaged in countless partnerships with peers around the globe through the years, but have never done a four-hands dinner with one another. Be sure to buckle up and prepare for a range of surprising and deliciously curious creations from this duo’s first duet. “I have seen JP grow so much over the years. He is a great chef! Collaborations give me the opportunity to learn, and I feel inspired by JP’s philosophy and art of cooking,” González says about his partner.
“Chef Chele has been a pillar in pushing Philippine gastronomy forward, and it’s an honour to work with him. I’ve always admired his unique way of exploring local ingredients and techniques. More than that, he’s a great friend and has been genuinely supportive of our work—making this collaboration feel natural and meaningful,” Cruz relates.

Cruz also notes that “this is Inato’s first full-menu collaboration with a local chef, which makes it particularly special. While every collaboration is unique, this one stands out because it showcases both of our experiences, perspectives, and styles.”
“A great collab menu happens when both chefs and teams are enjoying themselves in the kitchen. Both teams have to match each other’s energy and give so much to one another, then this will translate to the guests through a unique and meaningful menu that showcases two philosophies merging together,” González shares from experience.

With only 50 seats per night, the pop-up is intimate and highly sought after. Each reservation to this 7-course dinner comes complete with unlimited red wine, white wine, bubbly, plus three cocktails and tasty giveaways to boot!
