After a four-month hiatus, Tanjong Beach Club debuted with a more chic and stylish setting as well as an expanded food repertoire cooked in the Mibrassa grill

It has been a decade since Tanjong Beach Club opened in Sentosa and shaped the urban beach culture in Singapore. Most weekends, Singaporeans would descend to that neck of the woods for some fun in the sun while sipping refreshing cocktails like sangrias and mojitos, and enjoying casual beach grub which includes burgers and fries, and fish and chips.

But as the beach goers continued to evolve, so did Tanjong Beach Club which had undergone a four-month renovation late last year to refresh its interiors and update the dining concept. Head chef Mong Zhen Yew, who has been with the beach club for three years, tells Tatler that the idea stemmed from the team expanding on its original vision as “more than just a beach destination” where everyone can feast on an elevated wood-fired coastal cuisine in a stylish setting. 

In doing so, Yew and his culinary team consulted with Vallian Gunawan, the ex-head chef of Skool Kitchen Bali, for months to reimagine the classic barbecue experience by the beach. “With chef Valian, he helped introduce the wood-fire concept and the techniques to us because he has done it before,” shares Yew, whose dishes are given a smoky finish on the Mibrasa grill, using an assortment of ironbark, binchotan and applewood. With that said, both chefs collaborated on the expanded menu that is made up of “80 per cent new and 20 per cent signatures”.

Yew has completely embraced wood-fire cooking, sharing that it “achieves a result that you can’t get with normal cooking… which is that intense char from the flame and the smokiness that enhances the overall taste”.  The wood-fired flatbread is the best way to kickstart the meal, with the baked delight fired up on the grill for a crisp texture on the outside, then topped with nduja, mussels and stracciatella. Follow it up with the grilled seasonal oysters cooked in a decadent garlic butter that begs to be mopped up with warm bread, as well as the barramundi dry-aged on the bone for 7 days, grilled to get that crips skin and enhanced with tomato vierge and caperberries.

Fans of Tanjong Beach Club in its early days will be glad to know that the classics like the Tanjong Burger remain. Who can resist the juicy Tajima Wagyu cooked on the grilled and slapped with smoked cheddar cheese layered with picked cucumber and Hawaiian aioli, and served with crisp fries?

With the change of the dining concept comes a refreshed beverage programme that complements the new offerings. “We collaborated with Cat Bite Club to develop several cocktails that pair effectively with our grilled items. They’ve refined some of our existing offerings, such as the Tanjong Coast Tropical Spritz, elevating the original recipe,” Yew expresses. Moreover, they expanded the wine and champagne selection to complement the dining experience. 

With the new Tanjong Beach Club, diners are able to enjoy these offerings in a modern space that recalls mid-century beach houses defined by warm hues offset by pops of colour. At the alfresco area, the club is lined with custom daybeds surrounding the pool and overlooking the beach, while the main dining room is decorated with a mural inspired by the rhythm of the coast, which stretches across the dining room and al fresco area.

Yew believes that with institutions like Tanjong Beach Club, change is always a good thing. “We’ve operated for ten years with a consistent, casual beachside approach. The main challenge now is to shift customer perceptions and introduce them to our elevated dining experience,” shares Yew, which is what guests can now expect at Tanjong Beach Club 2.0.
