Having already conquered Tokyo with his bespoke blend of Neapolitan technique and Japanese precision, Tsubasa Tamaki’s pizza pilgrimage to Southeast Asia continues as he graces Singapore’s shores this June. While Singapore’s pizza landscape blossomed in the past year, Tamaki’s Pizza Studio Tamaki (PST) will undoubtedly garner much fanfare when it fires up its ovens at 38 Tanjong Pagar Road this June 10, thanks to its appearance on both the Michelin Guide’s Bib Gourmand and the prestigious 100 Top Pizzas in the World.

The delicate dance between tradition and innovation is rarely executed with such aplomb as in the hands of Tamaki. For the uninitiated, the Pizza Studio Tamaki creations are an obsession with detail, where a proprietary blend of Japanese and American flours results in a crisp crust with a yielding interior, and the much-coveted puffy perimeter. Since it first opened in 2017, Tamaki’s Tokyo-Neapolitan style pizzas are considered original, one that respects its Italian ancestry while asserting its Japanese identity.

At the 60-seater Singapore outpost, Ryosuke Tanahara, Tamaki’s protégé who trained with him for three years, is set to take the helm. He ensures that each pie goes through the 30-hour ageing process, promising a textural bite that has already enchanted diners in Roppongi, Higashiazabu, Okinawa and even Bangkok. Expect to choose between tomato or cheese-based pizzas, with classic toppings that make up flavours like Margherita, Diavola and Formaggi. The signature Tamaki is also available, featuring cherry tomatoes and smoked mozzarella on a tomato base.
Pizza Studio Tamaki is set to open its doors at 38 Tanjong Pagar on June 10. Bookings are yet to open at the time of reporting.
