BBC One’s MasterChef: The Professionals 2021 champion Daniel Lee (Dan Lee) takes over Ozone for a one-day pop-up dinner on Thursday, November 9, 2023. Known for his food concepts that revolve around his rich heritage and extensive global travels, Lee promises to delight guests with his unique and personalised culinary approach at the highest rooftop bar in the world.

Born and raised in Birmingham, UK, Lee's culinary journey has been shaped by his mixed heritage of English, Irish, and Cantonese roots, which heavily influence his dishes. With a foundation in classic French training, Lee seamlessly blends his cultural background with his extensive knowledge of global cuisines to craft captivating culinary experiences. His approach to creating dishes is a testament to his passion for understanding the history and culture of different cuisines. By delving into the origins of traditional dishes, he gains a deeper understanding of their essence. Drawing from his experiences, Lee expertly deconstructs and reconstructs dishes, infusing them with his own creative flair. The result is a harmonious blend of flavours, textures, and techniques that push the boundaries of traditional cuisine. During the exclusive dinner, guests will experience a celebration of different cultures through Lee's menu.

The four-course menu begins with a delightful starter featuring a silky scallop custard with pan-seared scallops elevated with the sharpness of sanbai vinegar, and the aroma of scallion oil—a Hong Kong cuisine staple. Guests who would like another appetising starter can opt for the sea bream, an extra course featuring cured bream enhanced with smoked vinegar and nahm jim, a sweet and savoury chilli sauce inspired by Thai cuisine.

Next on the menu is a refreshing consommé with hints of acidity from pickled and cured tomatoes, sweet and peppery notes from the basil foam, and a soft, chewy texture from mozzarella. For the main course, the Australian soy-cured Wagyu is garnished with traditional Irish champ potato, pickled shitake mushrooms, and topped with an exquisite dollop of caviar. The dinner ends with Eton Mess, a traditional English dessert consisting of a mixture of strawberries, Chantilly cream, tarragon oil, and green Sichuan peppers for an extra kick. Each dish showcases Lee's expertise in combining flavours and ingredients from various cultures, resulting in a harmonious and unforgettable dining experience.
