Under the masterful curation of executive chef Wong Chi Fai of T’ang Court, a bountiful selection of Lunar New Year specialties awaits epicureans, including auspicious Lunar New Year dishes, dim sum and a festive set menu.
Relish in the stir-fried sliced fresh lobster and golden-fried Jinhua ham (HK$1,328 per piece)—a highly auspicious way to welcome the Year of The Dragon due to the similar pronunciation of "lobster" and "dragon" in Cantonese. The chef marinates premium Jinhua ham in sugar for a month, creating a perfect combination of sweet and salty tastes. Crunchy bread crumbs add a delightful textural element to the dish.
Another highlight is stewed bamboo fungus roll with bird’s nest and Alaskan crab meat (HK$788 per person). This delicate roll features simmered bird's nest and silky egg white, topped with fresh Alaskan king crab meat. Among the dim sum on offer this season, the steamed bamboo fungus roll with sliced abalone, fish maw, and sea cucumber (HK$178 per person) embodies prosperity and harmony. Each small steamer presents a selection of premium dried seafood, meticulously steamed to perfection.
