Chef Peter Find of Heimat will join chef Lewis Scarfe at Hugo's to present an exclusive weekend brunch menu
Hugo’s is launching the second edition of its Connoisseur collaboration series. Executive sous chef Lewis Scarfe will work with chef-owner Peter Find of Heimat to devise a weekend brunch menu centred around the prized German white asparagus on May 23 and 24. A free-flow package is available at an additional price and offers bottomless German wines, draught Erdinger beer and Jägermeister.
Often touted as “white gold,” German white asparagus is one of the most prized ingredients of the season. Find have crafted a selection of dishes for the brunch menu that spotlight this coveted vegetable, including prawn tartare and caviar with German white asparagus spears, scallop with German white asparagus and vanilla seeds, and a slow-simmered organic 63-degree egg with German white asparagus. German classics make up the selection of mains, including veal schnitzel with poached German white asparagus, velvety Morel mushroom ragout with tender German white asparagus spears, and other seasonal creations.
Hugo’s will also present a variety of signatures. An impressive range of seafood on ice kicks off the weekend affair with freshly shucked oysters and Boston lobster, followed by cold appetisers such as caesar salad, steak tartare, Iberico ham with melon, and more. For mains, delight in Hugo’s signature roasted US prime rib of beef carved table-side from an iconic silver wagon. and served with traditional Yorkshire pudding for an unforgettable centrepiece. Another indulgent choice is the classic half lobster thermidor, served with a rich and creamy sauce and gratinéed to golden perfection. A decadent spread of homemade desserts conclude the brunch.
