Inside Hokkaido Table’s Chef’s Table Series, where fine Japanese-Italian cuisine meets some of the world’s best pours

While Hokkaido Table is known for premium Japanese dining, this is only one part of its offerings. Since January 2026, The Exchange TRX restaurant has been taking its culinary programme a step further, pairing its Japanese-Italian cuisine with an increasingly sophisticated selection of wines, whiskies and sakes.

At the heart of this is Hokkaido Table’s Chef’s Table Series, a series of intimate dining experiences built around a different beverage collection, producer or region each time. Expert sommeliers guide guests through carefully selected pours, while executive chef Edwin Tan develops a special menu designed to bring out the character of each bottle.

The result is a dining experience in which the food and drink are given equal weight, with each course serving as a considered counterpoint to the glass. The latest instalment, The Legacy of 1855: A Blind Tasting Journey of Bordeaux Premier Grand Cru Classé, held on September 25, 2026, was the most ambitious yet.

For one evening, guests were led by guest sommelier Nick Loo through a blind tasting of some of Bordeaux’s most collectible red wines. The wines were presented without labels, inviting diners to focus on their aromas, structure and evolution before discovering what lay behind each pour. The tasting was accompanied by a 12-course menu, with each dish carefully composed to complement and, at times, draw out the nuances of the wines.

For those who missed the Bordeaux dinner, the series continues in November with a celebration of Tuscany, beginning with a Masseto and Massetino Wine Dinner, followed by a Casanova di Neri Brunello di Montalcino Wine Dinner.

Yet for Hokkaido Table, a serious wine programme is hardly a recent development. Exceptional pours have long been central to the restaurant’s identity. Its commitment was recognised with the Wine Spectator 2026 Award of Excellence, which honours restaurants with notable wine programmes, while the restaurant also launched Winefest 2026, further establishing its focus on the intersection of gastronomy and wine.

The next Chef's Table dinner will be the Masseto & Massetino Wine Dinner, A Journey Through Bolgheri which features a six-course menu with dishes like smoked eel and Hokkaido scallop, paired with Massetino 2018, 2019 and 2020.
